Chili Prawn & Pickled Cucumber
Today, we will be preparing a delicious and nourishing meal for two individuals. This quick and uncomplicated meal suggestion can be prepared in under 30 minutes, providing a comforting and satisfying experience. Not only is it rich in protein, but it also contains a plethora of essential nutrients to support a healthy diet
Ingredients
For making Chili Prawn
Shrimps (300g), peeled and deveined
1 ½ tbsp Cooking Oil
1 tsp Sesame Oil
[1 tbsp + 1 tsp] or 4 cloves garlic (13g), minced
2 tsp ginger (7g), minced
1 tsp Chili flake
½ cup water
2 tsp soy sauce
2 tbsp sweet chili sauce (Maggi chili Sauce)
½ tbsp sugar
For Garnishing
4-5 NOS Green Onions, chopped
For making Pickled Cucumber
Ingredient for marinating
1 medium Cucumber (158g), sliced thinly
2 tsp salt
Ingredients for dressing
1 tbsp soy sauce
2 cloves garlic (5 g), minced
1 tbsp vinegar
½ tsp chili flake
1 tsp sesame oil
1 tsp roasted sesame seeds
2 tbsp green onion, chopped
1 tsp sugar

Directions
Method for making Chili Prawn (Shrimp)
- Heat the oil over medium heat and sear shrimps for 45 seconds on each side. Remove them from the pan and set them aside. Ensure that the shrimps are cooked halfway through.
- In the same skillet, heat sesame oil over medium heat and sauté ginger, garlic, and chili flakes until the garlic becomes fragrant or slightly golden.
- When the garlic has turned brown, add water, sweet chili sauce, and soy sauce without delay. Reduce the flame to low and let it simmer for 3 to 4 minutes, or until the sauce thickens.
- Once the sauce has thickened, reintroduce the seared shrimps back into the skillet and stir for a minute. This will ensure that the sauce mixes thoroughly with the shrimps and coats them evenly.
- Remove from the skillet and garnish with green onions. Serve hot with rice
Method for making Pickled Cucumber
- Thinly slice the cucumber and allow it to soak in salt for a duration of 5 minutes.
- Rinse the cucumber thoroughly with an ample amount of water until all the salt has been removed.
- In a large bowl, mix the cucumber with the dressing ingredients.
- Ensure that all the ingredients are thoroughly mixed together to create a well-blended mixture.
- The pickled cucumber is now ready and can be served as a side dish with rice.
