Shrimp Fritters (Cucur Udang)
Shrimp Fritter or Cucur Udang is a popular Malaysian snack that originates from communities living close to sea. It showcases the creative use of local ingredients, particularly shrimp. This snack not only tastes amazing but also represents the Malaysian spirit of incorporating fresh, local produce into dishes that reflect their cultural heritage.
Cucur Udang is essentially a savory fritter crafted from a mixture of flour, water, and various fragrant spices, with shrimp as the main component. The shrimp is incorporated into the batter or placed on the fritter’s surface prior to frying, resulting in a delightful snack with a crunchy outside and a tender, airy inside, complemented by the savoury sweetness taste of the shrimp.
Ingredients
Oil for frying
1 ½ cup wheat flour (220g)
½ cup cornstarch (70g)
1 ¼ tsp salt
½ tsp baking powder
1 tsp turmeric powder
1 ¾ cup ice water
2 Handful Bean sprouts (60g)
1 large/ 2 medium Onions (88g), sliced loose
1 large bunch Chives (80g), cut 1 inch long
20 small Shrimps/ prawns (200g)

Directions
- Combine wheat flour, cornstarch, turmeric, baking powder, and salt in a bowl. Whisk the mixture until all the ingredients are thoroughly combined.
- To ensure a smooth consistency, pour ice water into the mixture slowly while simultaneously stirring it to prevent clumps from forming.
- Quickly refrigerate the batter and allow it to set for 30 minutes in the freezer. This chilling process will inhibit gluten formation, resulting in a crunchier texture.
- Remove the batter from the refrigerator and incorporate loose slices of onions, chives, and bean sprouts. Ensure thorough mixing to combine all the ingredients effectively.
- Heat a frying pan on medium-high and add sufficient oil for frying.
- Take a small portion of the batter and place it onto the oil in the pan. Next, swiftly place one or two shrimps on top of the batter.
- Flip the fritters and fry till their edges turn slightly brown.
- During the frying process of the fritters, it is important to relocate the batter that is not being used back into the refrigerator freezer.
- Repeat Step 6 -8, till all batter is gone.
- Serve the fritters hot with Peanut Sauce.
