Quick & Easy Vegan Noodle
This recipe draws inspiration from Indomee, a popular noodle dish in Indonesia and Malaysia. While it is typically enjoyed as an instant snack, our version focuses on providing a healthier alternative. By reducing the intake of sodium and calories, and increasing the levels of protein, calcium, vitamin C, phosphorus, iron, niacin, and vitamin A, we have created a more nutritious option. Additionally, you have the flexibility to add your preferred vegetables and protein, making it a comforting and wholesome meal. Moreover, this recipe is not only easy and quick to prepare but also suitable for vegans.
Ingredients
For making noodle
2 dry noodles (140g) Vit’s (Halal) Instant original noodle
4 shallots (100g), sliced
4 cloves garlic (10g), minced
4 tbsp cooking oil
For making Sauce
2 tsp chili sauce (Maggie)
2 tsp light soy sauce
1 ½ tsp dark soy sauce
4 tsp water
Garnishing
4-5 (nos) Green onion or Spring onion, chopped
Steamed veggies
Sesame seeds

Directions
- Cook noodles for 1 min and 15 seconds, drain the cooked noodles and keep them aside. The noodles will continue to cook as they rest.
- In a saucepan, add oil and fry sliced shallots till brown and crispy on low fire. Remove and drain shallots and keep them aside.
- Meanwhile prepare sauce mixture by mixing chili sauce, light soy sauce, dark soy sauce and water.
- Into the same oil, increase heat to medium-low and saute garlic till fragrant and golden brown, then add the sauce mixture.
- Stir and cook sauce for 40 seconds or till sauce thickens.
- Add cooked noodles and turn off the stove. Toss noodles till they are entirely covered with sauce.
- Then add crispy onion and toss again till they are distributed evenly.
- Serve hot with blanched veggies and garnish with chopped spring onions.
