Vegan Purple Latte

Ingredients
Latte
2 medium size (180 g) Japanese purple potato
1 cup water
1 cup milk
4 dates
Toppings
Milk froth
Small pieces of boiled potato

Directions
- Prewash potatoes and chop them into smaller chunk.
- Transfer and boil potato chunks for 5 minutes or until they are soft and tender.
- Strain potato chunks and allow them to cool in a different bowl. However keep the boiled water and do not discard.
- Meanwhile, bring milk to a gentle simmer. Stir continuously to prevent scorching.
- Once potato chunks are cooled, transfer into a blender and add warm milk and dates. Blend till smooth and silky.
- Add boiled potato water into the blender. If the boiled water is insufficient, compensate with water till it fit a measuring cup. Blend again till latte comes together.
- Pour into your desired mugs and for a beautiful presentation, top it up with 4-5 scoop of milk froth on each mug and drop few pieces of potatoes.
