Green Gram Kheer
Kheer, also known as Indian rice pudding, is a timeless dessert that has been beloved for generations. Originating from the Indian subcontinent, this creamy and aromatic delicacy has found its way into the hearts and taste buds of millions worldwide.
Kheer is a versatile dessert and it can be easily customized and flavored with variety of ingredients. With this recipe we swapped rice with green gram to lend this drink a unique twist.

Ingredients
Green Gram Powder
1/4 cup (100 g) dried green grams or moong dhal
Kheer
1 cup (240 mL) Coconut milk
4 tbsp Green Gram Powder
1 cup (240 mL) water
1 tbsp sugar
Topping
4 tbsp Milk Froth (each serving)
Green gram powder, sprinkle

Directions

- Prepare green grams by washing and air drying a day before.
- First, roast green grams over medium flame until they become light brown. Roasting takes approximately 10 to 12 mins and it’s crucial that these beans are continuously stirred to prevent charring.
- Remove from heat and allow them to cool.
- Once cooled, transfer roasted beans into a dry blender and grind them into fine powder.
- Scoop and store in an airtight container (Storage: 1 month)
Kheer
- Pour milk into a low flamed saucepan and continue to add green gram powder and sugar. Stir immediately to prevent formation of clumps.
- Bring the mixture to simmer, as the kheer forms and thickens, add water and stir for 30 seconds.
- Remove from heat and pour into your desired mugs.
- The kheer will further thickens as it cools down.
- For a lovely presentation, top each mugs with scoops of milk froth and sprinkle with some green gram powder.
