Masala Chai (Spiced Tea)
Whether enjoyed in the morning, afternoon, or evening, masala chai is a flavorful and soothing beverage that is sure to awaken your senses. Chai is a delightful and aromatic Indian beverage that combines the richness of black tea with a blend of spices. It is a popular drink that is enjoyed and has gained popularity worldwide. The addition of milk and sweetener enhances the creamy and sweet taste of masala chai, making it a comforting and satisfying drink.
Ingredients
1 long cinnamon stick (8 cm lengthwise)
2 Star Anise
6 Cardamom Pods
Ginger (30g)
4 tbsp tea leaves
2 cups water
2 cups whole fat milk
3 tbsp Jaggery/ Brown sugar (30g)

Directions
- Grind cinnamon, cloves, star anise, and cardamom in a mortar and pestle until roughly crushed.
- Add ginger into the mixture and crush it together with the remaining spices. As ginger contains moisture, it is recommended to add it after crushing the dry spices.
- Start by boiling water in a saucepan. Once it’s boiling, turn down the heat and mix in the crushed ingredients. Cover the saucepan with a lid and let it simmer for 3 minutes.
- Next remove the saucepan from the stove and add the tea leaves. Cover the mixture and allow it to sit for 5 minutes. It is advisable to avoid boiling the tea leaves, as this can result in the release of tannin, which may lead to a bitter taste and potential discomfort such as nausea, headache, and stomachache. Hence, it is recommended to steep the tea leaves for a minimum of 5 minutes rather than boiling them for an extended duration.
- Strain and pour the tea concoction into a teapot.
- Simultaneously, warm some milk and add sugar. Stir to dissolve the sugar completely.
