Pav Bhaji with Chutney
Pav Bhaji is a delicious dish consisting of a flavorful thick vegetable curry (bhaji) cooked with a unique combination of spices, served alongside buttery, soft dinner rolls (pav). Ingredients
For making Pav Bhaji Chutney
Salted butter, (50g)
1 tbsp cooking oil
1 medium Onion (50g), chopped
A pinch cumin seeds
1 tbsp Kashmiri chili powder
½ tbsp crushed garlic
For making Mashed Vegetable
1 medium Potato (125g), sliced thinly
1 medium Tomato (117g), diced
Cauliflower, (140g) cut into small florets
Beetroot, (60g) grated
⅓ cup or (50g) Peas
½ cup water
1 tsp himalayan salt
For making Pav Bhaji Masala
Salted butter, (100g)
1 large Onion, (100g), minced
¼ tsp cumin seeds
2 tbsp chili powder
½ medium capsicum (84g), chopped
3 cloves or (14g) or 1 tbsp garlic paste
¼ tsp turmeric powder
½ tbsp garam masala
½ tsp amchur powder (dry mango powder) (optional)
1 cup water
1 tsp himalayan salt
For Garnishing
Lime
Chopped Onion
Butter
Coriander leaves
12 Pav or Dinner rolls

Directions
For making Pav Bhaji Chutney
- Heat a pan to medium heat and melt butter before incorporating cooking oil.
- Sauté the onions until they are translucent or for approximately 45 seconds, before introducing a pinch of cumin seeds and sautéing for another 30-40 seconds.
- Add Kashmiri Chilli powder into the saucepan now. If desired, regular chili powder can also be used. The distinctive characteristic of Kashmiri chili powder is its ability to impart a vibrant color to the dish.
- To prevent the chili powder from burning, make sure to stir it continuously while cooking for 30 seconds.
- Then, add the crushed garlic and reduce heat. Keep stirring for 1 minute or until oil separates.
- Remove from heat and serve with pav bhaji masala.
For making Mashed Vegetable
- Place all the ingredients into a pan and heat them. Once it starts boiling, cover the pan with a lid, lower the heat, and allow it to simmer for 20 minutes or until the potatoes become soft.
- Let the mixture cool down after removing it from heat.
- Mash the vegetables using a potato masher. To achieve a smooth consistency, gradually add water while mashing. Continue mashing until the vegetables are well pureed.
For making Pav Bhaji Masala
- Start by melting butter in a pan over medium-high heat.Add the onion and cook for 1 minute, then add the cumin and garlic paste and cook until fragrant.
- Stir in chili powder and continue cooking until the oil separates
- In the pan, incorporate capsicum, turmeric, garam masala, and salt. Stir and cook for approximately 1 minute.
- After adding the mashed vegetables, continue cooking for 2 more minutes.
- Then pour in water and set the heat to low. Allow the mixture to simmer for 10 minutes, ensuring that the lid remains closed throughout the process.
- Remove the lid, check for the consistency. The masala or gravy should be a little runny but not too thick. If required add a little water at this stage and adjust. Cover and let it cook for 1 or 2 minutes.
- Remove from heat, and serve with toasted Pavs/buns and chutney.
- The garnishing ingredients serve as essential flavors to Pav bhaji, hence, add a come chopped onion, chopped coriander leaves, a teaspoon of butter and squeeze a little lime juice before indulging.
